Top sirloins are very versatile pieces of meat with the bad reputation of being an inferior steak. Make no mistake! While it is true that sirloins are a little less tender, it is indeed the most flavourful steak. Its little fat cap will melt during cooking, which will give it more flavour and juice. The Angus designation is a certification that attests to superior quality meat. These steaks have excellent marbling and meet certain specific criteria. It is recommended the steak be placed at room temperature for half an hour before cooking. Season your steak with salt and pepper or other spices at least 15 minutes before cooking so the seasoning is well absorbed. Enhance your steak: cover it with foil and let it sit for a couple of minutes after cooking.
