Ribsteaks are a nice balance between tenderness and flavour. “Cap off” means the visible fat has been removed from the steak. The bone will also give extra flavour to your steak during cooking. If you like your steak well done, this is the cut for you! Choose a well-marbled piece. The small fat grooves will melt therefore making your steak juicier and tastier. Enhance your steak: cover it with foil and let it sit for a couple of minutes after cooking.
