Remove from packaging. Preheat oven to 400°f/204°c. Heat frying pan on medium high and add 1/2 tbsp (75 ml) of vegetable oil to hot frying pan. Place medallion into the pan and sear each side for about 2 mins. Place seared product on foil-lined baking sheet and bake for 20 to 25 minutes, until internal temp reaches 160°f/71°c. Use a meat thermometer as oven times may vary. Remove from oven and allow to rest for 5 minutes before serving.
